Tender Issued for Catering of V&A Museum of Design Dundee

V&A Museum of Design Dundee wishes to appoint a caterer for the provision of public and event catering services. The museum will be an international centre of design for Scotland and is the flagship of the Dundee Waterfront regeneration. The ambition for the museum is to create a must-see destination for local, national and international visitors.

Following the procurement process, the successful caterer will enter an agreement with Design Dundee Enterprises Ltd (DDE).  DDE, is a wholly-owned subsidiary of Design Dundee Ltd, the charitable company operating V&A Dundee. The contract term will be for five years from catering services commencement during 2018.

Caterers are invited to tender for the provision of public and private catering services at the museum, in two public spaces, the café and the restaurant, and at private events such as exhibition openings, meetings and sponsor and donor receptions. The caterer for the café and restaurant will have overall responsibility for staffing, the food and beverage offer, some equipment, and the day-to-day management of the space including legal compliance and health and safety. The DDE team will expect to have input into the food and beverage offer, staff conduct, advertising and the overall operation of the space as a critical element of the visitor experience at the museum. DDE will be responsible for the initial fit-out of the space and the procurement of fixed equipment and furniture. DDE will also provide access to utilities including water, power, phone and internet connections, waste disposal – all of which will be recharged to the caterer on a usage basis once the catering areas are operational.

The contract will be offered on the basis of a concession to provide public catering services in the café and restaurant and first refusal on any private event catering. The caterer will pay a fee to DDE of 15% of all turnover (exclusive of VAT) generated by the catering services, with a minimum fee.

The successful caterer will commence their own recruitment processes as necessary to ensure a sufficiently qualified team is in place for the duration of the pre-opening period, and to achieve a full complement of qualified and trained staff in time for the opening of the museum in 2018.
